    Gambia's National Dish: Benachin

    Yayha got two frozen chickens in that grocery delivery...and...with no fridge or freezer...or, no electricity...they have to cook the cold stuff, straight away. He's still gotta go out and hunt up some firewood so his mum can cook it up.

    I wonder if any of the cooks out there would try making it?

    I got to see this and other foods of The Gambia in that bike packing video I posted. Interesting stuff, lots of vegetarian probably because meat is scarce or expensive and refrigeration is hard to come by.

    The Gambia is an amazing country, that they have the life giving river sandwiched between two other nations that wouldn’t mind taking that resource if they could. Respect.

    while the finished product looks good when done in a fancy kitchen with a trained chef, i doubt the same dish would look/taste as good cooked in a hubcap over a wood fire.

    however, in either case the recipients of the food will appreciate it...


    poverty is a problem richer nations should help minimize...

    btw, which country gives the most of taxpayers dollars to those in need?

    I'm going to try it soon. Due to IBS I'll leave out the cabbage and substitute celery and 1/16t. compounded asafoetida for onion.

    If you ever use compounded asafoetida as an onion flavoured substitute be very, very skimpy. It is strong and too much will ruin the dish.

    after bowling today, i went for a burger at burger king...they had a 2 for 7 bucks deal with 2 burgers, fries and a drink..

    iso i ordered the 2 for 7 deal...he asked if i wanted everything on them and i said yes..he then informed me it was 7 something but that they were out of meat.
    i said huh?
    he said yes, they will come with everything, just no meat.

    i said, let me get this straight, the 2 BURGERS will come with everything except the BURGERS?

    he said yes, with as straight of a face as i have ever seen...

    i asked him if they still had fish sandwiches..he said yes, without the fish...

    the guy was serious...burger king had no burgers but sold the bun, lettuce and tomato as burgers minus the meat...full price.

    how you sell a burger without the burger is a neat trick if you can get away with it.

    I am seeing a LOT of entrepreneurial enterprises that go begging over there. Government corruption is the mainstay impediment. Yahya is growing into it all...slowly...as his eyes widen the more he is educated and sees what's going on. From my seat...it's magic to see this. He's a great kid. He'll be runnin' the place in due time! In a couple 'o years...let's put together a trip to Gambia!
