Can you explain the flavor of Alligator?

I remember once an ex's of mine's brother who was an engineer was doing observational dive assessments on a hydro dam in Missouri or somewhere. He said that as they were inspecting the inlet area they encountered catfish that just hovered in the caged area and feasted on a never ending stream of food the current brought them.
You wouldn't like them though. He said they were 12 feet long! Scariest thing he'd ever seen, he said.

I know about some giant Sturgeon fish in this state. But if there are Alligators, I can't tell you where they are. Maybe you mean in the Zoo? I went to the Boise Zoo and nope, they do not have Alligators there.
