how to make coffee to get the best taste out of it

First of all ---spare no expense.

    I prefer hazelnut coffee.

I have tried several methods of brewing...but the one I like best is the simplest.....called; the pour over method.

I am thinking of trying the vacuum coffee maker.

    A little story & then a statement:

Long ago I was playing war in a field with my squadron. I get up one morning & find that it's a "cold camp" meaning no hot water. So I head to the command tent (betting they had hot water) & found that some had been heated earlier. I found it, got a cupful & poured in my MRE instant coffee packet. That coffee was picked because it was the lowest bidder to supply coffee. So I was the only person to have coffee which was made out of lukewarm water & the cheapest coffee on the market. And the coffee was fricken wonderful.

So my take on coffee is all coffee is great no matter how it's made if it's the only coffee you have. There is no life without coffee, nor should there be.

I wanted to come back & add that over the years, as I've gotten older, I've cut back on coffee. Now days I hardly ever drink more than 10 cups a day. And yes it does freak my doctors out until they find out how much I used to drink.

I use a ninja coffee maker with a screen filter. I grind my own beans fresh. Eight O Clock original. I measure my coffee by the gram so every pot is the same. Grea8888t coffee. I like their espresso flavor too. French roast and Columbian are good too. McDonalds has a great mocha coffee and Eight O Clock's Macchiato is very good.

Jack, is your method French Press?

Open jar, measure out 2 teaspoons into cup (more or less), add boiling water, half and half, sweetener, stir and drink... repeat if desired.

I'm a meat & potato's coffee drinker. That means I only drink plain old coffee. I want no flavors in it other than coffee. My wife is, well a woman & loves all the different "things" that you can do or add to coffee. After we got our Kurig she got into flavored coffee. One night she suggested that we have an evening cup of coffee. Well I never turn down a cup of coffee so I said sure. She brings me a cup, I take a healthy swig & it stops halfway down my throat. It's one of those flavored type coffees. I gave her a glance that would have wilted a healthy plant & told her to warn me if she is suggesting flavored coffee & then poured that crap out. Fast forward about 2 months & the same exact thing happened except I blew up. That was one of the very very few times that I've gotten mad at my wife & maybe the only time that I've blown up at her. Not a pretty or funny story but a true one. I do not "DO" flavored coffee. And the 2 times I've had it, it does not go down my throat.

I never developed a taste for complicated coffee.

1 coffee to taste in basket
    2 nuke water in cup
    3 lower basket into cup
4 slosh basket up & down a few times
    5 empty basket

Ive tried every possible method and machine to make coffee in the last 50 years. Ive even gove into the chemistry of it.

The second best coffee maker in the world is the old 1970's glass Cona Coffee maker

The problem is they were made of cheap soda glass and badly annealed, so they developed 'glass disease' (microfine cracks in the structure) which made them brittle. Almost all the original 1970's Conas have now disintegrated. I have two still, used only on very special occasions, and they have to be treated like..well glass.....

However, heres the bit people dont grasp. You cant keep coffee warm. as it stands, all the short chain proteins and oils start polymerising and form long chain molecules, this fundamentally alters the taste, making it taste burnt and bitter. Its possible to keep coffee warm for a short time in stainless steel, because its partly the glass that acts as a catalyst, and steel doesnt, but it will still polymerise and taste bitter eventually.

The BEST coffee machine in the world is The Clover

Hand built at Stanford University to order, and costing $4000 apiece, this is literally rocket science for coffee. It controls every single aspect of the brewing, even down to having individual programs from different beans, and same beans roasted different . About 100 were sold, and the price of a cup of coffee from one is about $25. It is, without doubt the finest cup of coffee you will ever taste.

SO good, in fact, Starbucks bought all the rights and the part made machine and all the spares, for several million USD, because they considered it such a threat to their business. They have suppressed it, no more will be made. Second hand Clovers are unknown, i suspect if one ever appeared you would be looking at 5 figures easily.

Looks good, but...too much work for me.

What I do SWEAR by, is grinding my own coffee. Freshly ground just seems to taste better.

But I love all kinds of coffee. The only thing I can't stand is coffee that has been sitting out a few hours and gets that burnt, cruddy taste to it.

Fortunately, I will drink a pot long before it gets to that!
