    I once read a novel in which the main character was a burglar, he lived in the north of England, of course he’d take on the odd job of selective theft if the fee was right. The young burglar had a routine, when kitted out in his thief clothes he’d pop some red licorice into his mouth. The flavour of course wasn’t of true licorice, it was a manufactured alternative without any of the black or brown potent ingredients.

    The flavor of black licorice comes from star anise. You can also add star anise to a mix of BBQ spices. Gives an exotic Chinese or Filipino flavor.

    Originally licorice was made with aniseed (which has a nearly identical flavor to star anise) and the roots of the licorice plant (in pea family) which does not have much flavor but has a strange sort of zero calorie sweetness. This was before sugar was available in Europe.

    I agree that molasses is part of the flavor as well. Oftentimes salt.
