    Zuchinni - tastier than you thought

    I used to hate zuchinni, too mushy. It was a texture problem.

    Then I heard that if you cut out the middle (the part with the seeds), it will stay firm and it will taste better. And its true.

    My favourite is to cut a zuchinni length wise, cut out the seed part so the zuchinni is like a boat. Dice onions and cook the onions with hamburger meat. Mix the onion/meat with some mild salsa, fill the zuchinni "boats", cook in the oven for 20 minutes at 300. Tasty.

    Sounds delicious. I love zucchini. The way I keep from getting it too mushy is not to overcook it.

    I slice zucchini, cut up a Roma tomato or two, add onion and butter.......and cook that all together (with spices to your taste) (I like garlic and cumin). Delicious. And to make that recipe even easier: sliced zucchini, a can of tomatoes and green chiles (I prefer Hatch but Rotel is fine) and onion.

    Tip: If you saute the onions and zucchini until they start turning brown before adding the other stuff it adds to the flavor. Shredded cheese and a couple of fresh cilantro leaves on top is great.

    zucchini is my second favorite vegetable. Green beans is first. Eggplant is in the top 5.

    Zucchini is like okra. Mix it with other stuff that tastes good and it's not too disgusting.

    I remember the zucchini season at work. A woman would come in with a small sack of zucchini and share with the other women. A week later we were carting bags of zucchini out of the coffee room to the dumpster. My neighbor's wife planted a garden and I cracked up when I saw four tomato plants a eight zucchini plants.

    I stuff my Zukes with the same mixture I use for Stuffed Bell Peppers.
    I grill zucchini with Patty Pan Squash, and Delicata Squash. Baste with Garlic butter, salt and pepper.
    I also eat it raw, dipped in Ranch. Fried , Grilled or Sauteed, I love me some Squash.

    Grilled Zucchini:

    Cut it either into halves or quarters.

    Brush it with a lot of Olive Oil.

    Cover it with pepper.

    Grill until done!

    Goes well with anything, really, especially grilled dishes.

    (But remember! This is a STARCH. So, while it has good stuff in it, count it as a carbohydrate!)
