    My Braille Method Meatloaf!

    Wow! I've never considered myself any great chef...but...I outdid myself with another attempt to bake a meatloaf that wasn't dried cardboard!

    First off...I sautéd a large red onion with minced garlic in olive oil. Once it cooled...I kneaded it into the 50/50 pork and veal mince...plenty of shaved parmesan...and one egg yolk. That's all...nuthin' else. Man...this one's GREAT! My idea of the sautéd onion really left it juicy as anything. Me 'n Knucklehead loved it.....

    the onions make the meatloaf. we did it with ground lean sirloin. awesome.

    That sounds delicious. My grandmother made a meatloaf with ground beef and ground ham. Ham, not just pork. It was amazing. She had a meat grinder and ground her own meat for just the right consistency.

    My personal trick to meatloaf is to make the loaf, freeze it, then put it into my instapot ... with V-8 juice (i used the spicy kind) poured over it. I add some ketchup to the top near the end. To me, the V-8 makes a wonderful gravy. Of course, it's personal taste....not everyone might enjoy it.
