    My younger son took three of the grandkids out fishing about 4am this morning, on a friend's boat out of Babylon Long Island. They brought back two almost 60" stripers, each close to 90 lbs before dressing, and an assortment of flukes and other small to medium sized fish. He dropped off one of the stripers and a few of the flukes here, took the rest home. I carved this monster into steaks, reserving the tail and head. All 4 of my kids, their spouses and the 16 grandkids are coming for dinner. After placing about 27lbs of the steaks into a marinade of fresh squeezed lemon juice, orange juice, chopped mint leaves, tarragon leaves and fresh sage, a bit of red table wine, innumerable cloves of garlic, I'm turning them every half hour or so and basting. Once everyone arrives, I'll grill the steaks about 4-5 minutes per side. They are thick.

    The remainder of the fish, with exception of the head and tail, is now in the freezer. I took the flesh from most of the tail, leaving a bit for the cat to relish, and the head, minced it well with more lemon juice, a bit of white vinegar, more garlic, assorted hot spices, for a ceviche which is now in the fridge. I'll serve it on pieces of toasted white bread baked yesterday, as an appetizer. My wife has made about 6 lbs of orzo salad made with bits of onions, black olives, vinegar, and spices, now in the fridge. Both my daughters and both my daughters in law are bringing additional salads. Two of my grandsons working with help from their sisters, are baking fresh cherry pies we'll have for dessert. I've got the ice cream machine ready, with the ingredients for fresh poached peach granite to serve with the pies. We've got a half dozen 6 packs of different craft beers in the fridge, and 4 large pitchers of fresh lemonade, another 4 with iced tea.

    I've been playing Paco DeLucia on the sound system all afternoon, probably throughout dinner. Should be a very pleasant family dinner.

    My world famous recipe for Chicken with Artichoke Bottoms and Black Olives.

    Chicken Breast (as many as you need. A lot of them are Kim Kardashian sized and you can split them in two
    1 bottle Kraft Italian Salad Dressing, nothing else is the same, use the Kraft or just stay home
    1 cup white wine (use good wine, cheap wine may be cheap but its bad as well)
    1 can artichoke bottoms. You can use the hearts but it won't be as good
    1 can medium sized black olives (remember Black Olives Matter)
    1 onion chopped, sliced, stomped on, what ever way you like onions. I slice them
    1 box regular mushrooms. Don't go all fancy, you could end up with magic mushrooms if you aren't careful
    1 Tomato, sliced and diced (use a good tomato, and not a canned product)
    1/2 tomato run through food processor and juiced.
    1/2 can tomato puree or paste
    Salt and pepper to taste
    1/2 cup each Italian bread crumbs and Parmesan cheese. Sprinkle cheese for this step

    Mix all ingredients into a baking dish. Bake covered in 400 degree oven for at least 40 minutes or until chicken is fully cooked.

    Spread layer of shaved Parmesan and bread crumbs on chicken mixture
    bake until cheese melted and bread crumbs brown

    Serve with pasta or risotto rice

    Have a glass of Italian white wine

    Make a salad of chopped tomato and avocado.

    Enjoy

    I cooked a chicken last night and have a lot leftover, I'm shredding it up and making enchiladas with it tonight.

    When I make the chicken enchiladas, I use the green sauce and, mozzarella.
