Pork roast is in the oven and Black Eyed Peas are simmering on the stove. I already have coleslaw made so we won't have the usual boiled cabbage.

I'm always interested in what people put in 'salads' that include meat. I like to make a cold elbow macaroni salads with chunks of either shrimp, chicken, or ham in it. I also put pickle relish, sliced mushrooms, and black olives in it. My husband loves it.

I usually make enchiladas , with leftover chicken.

I'm having a ham sandwich, with the Black Forest ham I just bought from the deli and, some chips.
