    Coonass Pizza

I had a very hard, frustrating day. Pizza is my filet mignon.
Instead of taking one of those Wal-Mart, rising-crust pizzas out of the freezer and doctoring it up , I made a quick, no-yeast pizza dough with some flour, oil, and baking soda.
I love deep dish or rising crust pizzas. No thin crust for me.

Hmmm. Well, didnt have much in the fridge or freezer to work with. But I did have some imported pizza sauce someone had given me from Central Grocery in the French Quarter.

I laid the sauce out on the dough, heavy, then I put the last 4 oz.( half a bag of shredded cheese) of cheese I had left.

Then, the last 25 pepperoni I had left in the fridge.

Then a can of small shrimp.

Then a 12.5 oz can of chicken breast meat .

Then a 14 oz. Package of Hillshire smoked sausage, sliced thinly on top.

Baked at 400 for 40 minutes.

Tonnerre et [Z] e'clair ! Mai's ca cest bon, ouais!

    Dayum.
I never had or made a smoked sausage pizza before.

Almost as good as bacon on a pizza.

Sounds great except for the shrimp, I don't do shrimp.

On the rare occasion, I make pizza dough, I prefer a no yeast dough. It works great on the grill.

Speaking of coon... um... turns out a raccoon has taken up residence in our attic. My question is, can I eat him? For sure I'm going to make a hat out of him, but I remember granny used to make that possum stew, I've never actually tasted that stuff, I was wondering if it's any good. lol

    Shrimp on pizza?

Is that one of the things, a person shouldn't knock, until they've tried?

I was gunna take one rickity, but I was dead on my feet.
Another day of breakdowns and fixing greasy equipment. Worked on dat all morning. But we still managed to pick about 3000 pounds of pecans from 1pm to 4:30 pm yesterday and get them all run through the cleaning plant. Thank god my parents came to help me on the conveyor. We should be picking 10,000 lbs a day without all the damn breakdowns.
Then i had to sew and haul 23 sacks (130-150 lbs each) to the shop and stack them.
I was going to take a pic but forgot in my hurry to take a shower.

I picked all the smoked sausage off the top and ate it, already.
