    I may need to do some research on sugar beets, yes @Rutabaga .

    The good thing is they grow in North America in the temperate latitudes.

    The bad thing is they taste good simply as a food product.

    Might as well grow corn, then let it malt (partially sprout), then toast it and make moonshine out of it from corn mash.

    Illegal of course to distill on your own. But if SHTF nobody will be worrying about legal or illegal.

    Success !!!

    After 2 weeks of fermentation the sugar mash tested positive for alcohol !!!

    I boiled a sample of it (1 cup) and it boiled way below the boiling temp of water.

    Now I am straining, pasteurizing and bottling it.

    My pasteurization is to heat it first to just below boiling, and then put it into the freezer to quickly cool it.

    Then I can bottle it and put it into the fridge.

    The mash tastes mildly sweet, so this is a sweet sugar wine, not a dry one.

    Dry wine simply means not sweet.

    The pasteurized sugar wine tastes like honey mead.

    It is cloudy and has a slight yellowish tint.

    It is definitely sweet and tastes good.

    I estimated that the alcohol content is 10%.

    I have bottled it and now it goes into the fridge.

    With the pasteurization all the yeasts and bacteria should be dead.

    It should be safe to drink.

    Once it has cooled I will have a glass to celebrate.
