    You bake the potatoes until they are as you would a baked potato. So, when you squeeze them and they give they are done. But, then you have to let them cool completely. Then halve them and scoop, the potato flesh will be firm and silky. This is a good thing.

    The relish and apple cider vinegar are replaced by the pickle juice (oh and I add chopped pickles to my potato salad) I see no reason to add in a sweet element to potato salad, but a lot of people love to add in bread and butter pickles, so...

    And, to address your concern about mushy potato salad... Most potato salads are mushy. The potato salad I make is the opposite. That is why I pointed out that boiled potatoes are so starchy. You are imaging a "fluffy" baked potato. but, once you bake a potato and let it cool it becomes something else

    Me, I do not like the thick, mushy sauce that forms around most potato salads as a result of the boiled potato transferring starch to the sauce.

    I say give it a try, you can make a very small batch, say 2 potatoes and adjust the rest, see if you like it or no, pretty cheap. Worst case scenario, you end up with potato skins to deep fry, shallow fry or even bake, add cheese and various other toppings, win.

    I am the opposite. I do not like potatoes that are still "hard" in my potato salad. The softer the better. My aunt would bake her potatoes that went into her famous potato salad recipe. To this day, I have not had a salad that comes close to my aunt's.

    I use WHITE sour cream in lieu of WHITE mayo. As well as a pinch (or 2) of Colemans mustard. I too use pickle juice as I can't find dill here in the colonies

    @Rutabaga ...First off, if anyone should be trusted to know his 'taters, it's our good Root Buddy.

    Second, it happens that there was a leftover baked tater sitting in the fridge from 2 nights ago, so I used it to throw together a 'tater salad to go w/tonight's bbq'd chicken.
    Guess we'll see if we notice a difference. (No, did not taste-test, 'cuz, as you surely know, tater salad's gotta sit to meld a bit. Besides, it's skimpy enough, as it is.)

    @Rickity Plumber, jftr, my taters don't come out crunchy. Just not so soft that it's closer to German Potato Salad, like some people make it.

    Honestly, the only difference my husband and I noticed is that I forgot the mustard!

    Wish we did have red potatoes on hand, though. Definitely sweeter. Even better, if ya grow 'em yourself.
