    I just baked an applesauce spice cake - deeeelicious!

    I've cooked these for years since the 90's and every time they come out delicious! This one today was no different. My wife had to run me out of the kitchen so I wouldn't eat it all!



    Preheat oven to 350 degrees.
    INGREDIENTS


    • 2 1/2 cups all-purpose flour
    • 1 1/2 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 3/4 teaspoon ground nutmeg
    • 1/2 teaspoon ground cloves
    • 1/2 teaspoon salt
    • 1/4 tsp baking powder
    • 1/2 cup (1 stick) unsalted butter, room temperature ( I use salted )
    • 2 cups sugar
    • 2 large eggs
    • 16 oz applesauce
    • 1/2 cup of chopped walnuts (I don't put walnuts in it)
    • 1/2 cup raisins

    Mix first 7 ingredients in large mixing bowl.
    Beat butter in large bowl with electric mixer for 1/2 minute

    Add eggs one at a time beating one minute for each
    Add sugar to butter and egg mixture and beat until smooth
    Add dry ingredients a little at a time until well blended

    Beat in applesauce
    Fold in raisins

    Bake for 45 minutes.

    I could make that but I'd have to blenderize some apples. I'm out of raisins. Maybe I'll make an almond or lemon pound cake with a simple glaze. I haven't made a cake in ages. Pound cake is so easy.

    Leaving the raisins out will not make much difference.

    Next time I go to Aldi, I'll pick up some golden raisins and some walnuts and try it. I'm also thinking making some candied nuts and them chope them fine and add to a simple glaze....wowowowowowow, maybe you could try that too. I'll give out my candied nut recipe if you want it.

    Mmmm....that sounds/looks so good!

    I made baked apples today..... didn't turn out so hot....they looked really good in the picture, but, I don't know, they just didn't come out right.
