Back in the day we would stick whole hams, shoulders, etc in a crock full of lard or salt. No refrigeration. Nothing ever went bad. Salami, mortadella,etc. all hung from strings on the ceiling to be sliced as needed. Eggs were never refrigerated. Lots of items were smoked which tripled their life.
